Hi lovely people!

As promised, I’ve produced another “all English” episode of Casual Kitchen, just for you people who don’t speak German. This time, I somehow seemed to be struggling with the fact that I had to speak and cook at the same time, which resulted in me rambling on and not always making much sense. Hope you enjoy it anyway!

As it is officially summer now, today’s recipe is as timely as it is easy. It’s also a pretty good way to “cook” something with whatever leftovers are in your fridge. Almost every time I’ve cooked rice in the past, I had some left over after the meal. And almost always, I didn’t know what do do with it.
That’s why I like this recipe: It’s easy to prepare and the rice is really one of the heroes instead of a mere “filler”.

You can use almost all kinds of lettuce or cabbage. It doesn’t really matter. Use whatever is in season and locally available.

You can also add all kinds of fruits and veggies. Things like strawberries, bell peppers, shredded carrots, …

** Ingredients (serves 6):

  • 1 small napa cabbage
  • 2 cups of leftover brown rice
  • 2 cups of grapes
  • 1 cup of walnuts
  • 1 small bunch flatleaf parsley
  • 3 tablespoons white wine vinegar
  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon of plain yogurt
  • Salt, pepper
