Today is a very special day!
First of all, it’s Food Revolution Day and thus the whole world is celebrating good, healthy food by raising awareness of how easy it is to cook and how important food education is (especially for kids).
It’s also the very first time, that I’m posting a cooking video shot entirely in English. This is by no means a coincidence! As many of you know, this whole show only exists because of Jamie Oliver and his Food Revolution. He was the inspiration to create this show, to show people that cooking doesn’t have to be complicated and that you can create healthy meals in a very short period of time. Even with a small budget and little to no cooking skills. It really doesn’t take much to create a healthy meal for yourself, your family or even a bigger group of people.

So, without much further ado, I present today’s recipe: Easy Egg Burgers with Guacamole.

They are really my take on Egg McMuffins (but of course you couldn’t call them that because the name is trademarked). Aside from the eggs, literally anything else can be prepared ahead of time. Just fry up the burger patties, whisk up the guacamole and put everything into the fridge. When time comes to prepare the meal, just put a few eggs in a pan and assemble the burgers.

You can serve them with a nice little salad, a few leafy greens or (my favorite) an indian-style rice with loads of spices and veggies.

Pro Tip:
Use coconut oil to fry the eggs for a nice coconut flavor.
If you don’t like pork or you’re not allowed to eat it, just leave it out. It’s not essential for this recipe.

Ingredients (serves 4):

  • 8 large eggs (organic, free-range)
  • 1 pound of ground meat (50% pork and 50% beef)
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon smoked paprika
  • Chili powder (optional)
  • 2 shallots
  • 1 lime
  • 2 ripe avocados
  • Olive oil
  • Salt, pepper
